No Cake Today

R sent me flowers, tulips, today. He knows tulips are my favorite.

A baby boy turned one today. I said a prayer for him and shed a few tears (or, in reality, sobbed hysterically while on my knees in prayer).

A reminder of beauty for our home today.

"Where were you when I laid the foundations of the earth?
Tell Me, if you have understanding."

"Have you entered the treasury of snow,
Or have you seen the treasury of hail,
Which I have reserved for the time of trouble,
For the day of battle and war?"

Then Job answered the Lord and said:
"I know that You can do everything,
And that no purpose of Yours can be withheld from You.
You asked, 'Who is this who hides counsel without knowledge?'
Therefore I have uttered what I did not understand,
Things too wonderful for me,
which I did not know.

What's New Here

1. Ron brought me yellow roses last week. They have opened quite beautifully. I think fresh flowers make a room happy.

2. We have eaten bacon and eggs for breakfast each day this week. I usually have trouble (this is what grammer books call an understatement) rising early. Oddly enough, I've gotten up and cooked breakfast two days in a row! (I got a break this morning because I was up with the Squirms last night/early this morning. Poor child isn't feeling well. R was a sweetie and cooked.) I'm really enjoying this menu we are trying.

3. Squirms has learned that her mother does not share bacon.

4. I'm enjoying using my cast iron skillets for eggs and bacon. And cornbread. Cornbread is now my favorite food. That may be what I serve at Squirm's birthday party instead of cake.

5. Speaking of....I've been obsessed keeping busy and having fun planning the Squirm's first birthday party. One of my goals is to make the best cupcakes anyone has ever tasted.
I've decided to try out a couple of recipes for red velvet cupcakes since she is a Valentine's baby. I used coconut flour on my first attempt. It was a diaster. I guess one can't just substitute one flour for another in a cake recipe? I knew there was a problem when I tasted the dough. And it looked like play dough. I had to throw cupcakes away. Attempt 1: FAIL. The next day I made the same recipe with all-purpose flour. They looked and tasted like real cupcakes. Not the best I've ever had, but certainly edible. With a sweet, crunchy top. Attempt 2: Acceptable.
I will keep trying.

6. Monday afternoon was spent with friends watching season two of Downton Abbey. It was lovely. Especially since I've seen all of season two and therefore didn't want to throw things at the TV during the first several episodes. Perhaps sometimes I take fictional stories too seriously?

7. I took a personality quiz. Based on characters from Winnie-the-Pooh. Yes, I did.
It told me I was Rabbit: Tactical, strategic, and a mastermind. While I really was just taking this for fun, I was surprised at the accuracy of the result. Then I made asked R to take it. The very scientific quiz said R was Tigger. This may be the most accurate personality quiz I've ever seen.

8. Monday I wore a pink frilly skirt, old orange t-shirt, and an orange headband. This one is for L. She loves my pink skirt. I'm going to wear it everyday when she visits in February.

9. The Squirms is a dancing machine. I am looking forward to signing her up for ballet classes. And perhaps tap. We are going to need to guide this blossoming talent because her current moves suggest natural hip hop and belly dancing skills and we will have to lock her in her room from years 12 - 28.

10. I bought a 1000 piece puzzle for R and I to put together. It has been fun. 1000 pieces is a lot of pieces! Our new goal is to finish the puzzle before Squirms turns five. And that is a stretch goal.

Also, Happy Birthday to my father-in-law, Senior R!

Eleven Months!

We've all survived for at least eleven months!!

That's right: Giant monogrammed flower bow AND Star Wars t-shirt
Kissable foot
Still not sure about this grass thing
Oh, and ruffled pants. Her mom has style.
I can't get enough of her close ups!
This one may be my favorite from our impromptu photo shoot.
She knows.
Happy 11 Months to me

The Thief

I complain a lot about the weather here. But not today. It is beautiful outside. I miss wearing boots and scarves, but thoroughly enjoyed jogging in 70 degree weather with a breeze and sunshine.

Our street this afternoon.
We are having a lovely weekend - full of productive tasks like going to the post office, flu shots, and yard work. We have been so productive that we decided to take a trip downtown this afternoon to stroll, shop, and eat homemade ice cream. I love weekends when no major events are planned.

Playing with her vanity.
Squirms has also been enjoying her toys from Christmas. One of her favorites is a vanity from her second cousin. I was a bit worried about her already having a vanity and learning words like lipstick; but it's really quite fun. She loves the comb - poor bald girl - and the powder puff.

Her keys play music too.
She has learned on each toy what to push or spin to make it play music.....over and over and over. And over. Her awake time is pretty much just one big dance party. She likes to move, and giggles when she catches a glimpse of herself dancing in the vanity mirror. Then, of course, she licks the mirror.

I can't count how many times a day I laugh out loud at something she is doing. R and I both just love to sit and watch her play - her expressions, her attempts at finding toys under the dresser, batting the soccer ball with her hands flailing. And our parents and sisters seem to get just as much joy watching her on facetime.

Food, Pictures, and Issues. And Cornbread.

Our January so far has been about food. Last night I used made up the phrase OMG to the OMG. Now, what would make me use language of a twelve year old girl sending a text message and the exponential function together? The answer is cornbread.

My in-laws gave me a cookbook for Baby/Toddler meals because they know I've been mainly making (and by making I mean, buying fruits and veggies and pureeing them) the foods we've introduced to Squirms. It is a great book full of meals that I also want to eat. The ones I've tried so far are giving her much more texture and taste variety than I have come up with on my own, and they have been easy to prepare.

Brown rice, Avocado, Tofu, and Cilantro

Feeding myself!

And feeding the dogs!

I've been hesitantly reading, thanks to LGC, about coconut oil and other things that are supposed to be healthy. I will admit, I grimace when people talk about eating organic. I get the impression that people think eating things from a garden is a Brand New Idea. And then I automatically judge said person to be ignorant of history and world around them. We are all a bit ignorant, though, of the world around us if we haven't been in it. It was just this past year that I realized R mainly learned about agriculture in school and not from working in the back yard as a kid. We were discussing a billboard on I-75 and it dawned on me that not everyone grew up knowing how delicious sour apples can be if you sneak and pick them early from the trees in grandpa's back yard, or knowing that squash plants are itchy and you had better wear gloves when picking a row. Then it dawned on me that my daughter isn't going to know these things unless R and I go outside and plant things. This led me on a downward spiral of worry for Squirms and disappointment in myself that I will spare this post. (To R's credit, he is the family member who maintains a small back yard garden and made a lemon tart from the lemon tree this year)

I digress, back to my judgement issues. I always thought my parents and grandparents had gardens because we were poor and needed food. People who didn't freeze or can vegetables and berries could afford to eat at restaurants. I realize this may sound odd as I sit in my suburban home that is ten feet from either neighbor, typing on my MacBook Air. But, really, that's what I thought as a child. Growing your own food meant saving money; not being picky about what you ate....but maybe it's okay to be picky about what we eat....maybe it's better to be picky about what we consume.

R will tell you that I consider ordering pizza for delivery to be equal to a dinner at a restaurant with white table cloths. I mean, they deliver it!!

Somewhere along the way, I've transformed to think of treats as normal. I tend to eat like I'm always on vacation or each day is a special occasion.

While I'm working on my issues -  not automatically judging people who use the word organic, and trying to reduce my dependence on chocolate and bread - I went to the grocery store and bought mainly organic items. In my completely logical train of thought, this brings us to what we had for dinner last night. I was convinced to buy more raw vegetables and fruits at the grocery store in an attempt to make us a bit healthier. And last night I realized I needed to do something with the collard greens I'd bought before they went bad. Side note: I know how fields of collards look and smell, but no clue how to cook or eat them. I'd always run the other way when Granny was cooking collards. Yuck.

Thankfully, the cookbook I own called Southern Boy Cooks: Good Grits! had an interesting greens recipe and the next page had a cornbread recipe. While I didn't actually have enough bacon in house to use in both recipes as required, they both turned out really well. R was very impressed with the Mess O' Greens and the kick that came with them. And I have never eaten cornbread this good. I said a prayer of thanks this morning for the recipe. And had a small slice with breakfast and lunch today.

We paired leftover Beef Bourguignon with these sides and had a wonderful meal. The beef bourguignon was a new recipe for me too last week - thank you Julia Child.

Mess O' Greens

Cornbread that Jesus allowed to be invented.

My attempt at a food photo.
While I'm not a nutritionist, doctor, farmer, food critic, chief, nurse, chemist, or FDA employee, I do know we enjoyed an excellent meal last night.

Oh, the cornbread.

New Year's Eve

L was in town for New Year's Eve. And even though I totally failed to throw a dinner party in her honor New Year's Day, she graciously accompanied us to AWR's house for an Eve party with old people and little kids.

She also played with Squirms and let me go for a small jog, and made this:
http://www.tasteandtellblog.com/red-velvet-cheese-ball/

I should mention I am still craving this. It has imprinted on my brain, or tongue, and I don't even find oreos worth snacking on because all I can think about is this red velvet cheese ball. Obviously I can never make it again. But maybe for Valentine's Day.....

Still awake at midnight!

This one didn't make it to midnight. And was ANGRY when we woke her to leave.

The ladies. Watching the LSU game.

I also read a post by the Pioneer Woman in which she gave resolutions for each letter of the word Resolution. I thought that would be fun to try.
R - Read more.
E - Eat more raw fruits and vegetables.
S - Stop drinking coffee, diet coke, and mate tea after 3:30 PM.
O - Only drink milk with breakfast, after a run, and with cookies or cake or pie or bread pudding.
L - Lecture the dogs on how beautiful they are while giving them hugs before bed.
U - Use eye cream before bed.
T - Take time to sit in the front yard and let Squirms crawl around in the grass. Even if it is St. Augustine grass.
I - Investigate Tabata.
O - Orchid in the kitchen. Don't kill it.
N - Never make the red velvet cheese ball.

Visitors!

I love visitors!
My parents and youngest sister flew down last Friday to see us....I mean, to see Squirms.
They were troopers and helped clean our floors, take down the Christmas tree, and were okay without home cooked meals.

We went for a walk on the beach.

I can't remember why they are laughing? I wasn't dancing.
The water was a beautiful blue.

Dad tried to take our picture. He also suggested we watch Psycho. I'm glad I've now seen that classic film; but it was much scarier than I thought it would be. At least there were four others watching it with me.

Squirms wanted to eat the grass.

Lots of stories were read about animals, saying goodnight to the moon, and Peter Rabbit.

She does love the touch and feel books.

We had Earl Grey in the afternoon.

Love my tea cups and saucers!

And L took naps.
She had a good excuse - Squirms was up all night due to her ear ache and playing with her grandpa; and L was trying to sleep on the couch next to Squirm's room. Thankfully, I slept great because her grandpa didn't mind playing with blocks from one to three am.

And I took pictures.

I'm sad that the Squirms and I are without L today (she stayed until yesterday); but I've given Squirms extra hugs and kisses since I have her all to myself! We've also had one raspberry blowing competition.

L completed the keepsake box for Squirms that had been on my to-do-list since August. She also burned calories laughing at me while I attempted a Julianne Hough dance work out (probably more calories than I burned while trying to follow Julianne. I tried to explain that my hips are two times as big as Julianne so a hip roll takes me twice as long).

Which reminds me: Never, never ever, sample a Red Velvet Cake Cream Cheese Roll.

Which reminds me: Never, never ever, try on a Michael Kors shoe that is not on sale.
